Equipment

  • 1 pasta pot and a colander
  • 1 nonstick saute pan
  • 1 Spatula
  • 1 colander for draining pasta

Ingredients

  • 8 ounces ditalini pasta cooked al dente
  • 1-2 tablespoons avocado oil
  • 8 Ounces of moderate Italian ground sausage
  • Half cup sweet onion diced into small pieces
  • 2 cloves garlic minced
  • 1-1.5 teaspoons of tomato paste
  • Squeeze salt from kosher to taste
  • A few turns of cracked black pepper to taste
  • 1/2- ¾ cup low sodium chicken broth
  • ¾ 1 Cup heavy cream
  • 1 cup Parmesan cheese grated
  • Flakes of red pepper optional to add garnish

Instructions

  • Cook the Pasta:
Begin by boiling the salted water in a pot. Then, add the ditalini noodles to the cooking according to the instructions on the package and aim for al dente. This is important to ensure that the pasta doesn't get too soft during your final meal. After the pasta has been cooked, take it off and mix it with avocado oil to avoid sticking. Place the pasta aside.
  • After boiling, the ditalini pasta is tossed with avocado oil.
  • Make the Sauce:
In a saute pan, heat the oil at medium to high temperature. Pour in an avocado oil. Once the oil is hot, you can crumble it into your moderate Italian sausage and cook until it's browned by breaking it into pieces using a spoon while it cooks. This will allow the sausage to release flavorful oils, which aid in creating the sauce.
  • Add Aromatics:
Mix chopped onion and minced garlic, and dice in the same sausage. Sauté until the onion is transparent and aromatic. This gives a rich flavor to the sauce, which adds a rich, aromatic flavor.
  • Caramelize Tomato Paste:
Add the tomato paste and allow it to simmer for about 2 minutes until it darkens and caramelizes. This process will bring out the tomato paste's sweetness and adds a wonderful taste to the sauce.
  • Deglaze the Pan:
After that, pour in the broth with low sodium and scrape all over the skillet's surface to remove any caramelized bits stuck on the bottom. The broth should be reduced by half, concentrating the flavors and providing a delicious richness to the dish.
  • Add Cream and Cheese:
Reduce the heat to medium, then add large quantities of heavy cream. Mix thoroughly to mix. Incorporate your grated Parmesan cheese and stir until it melts and the sauce is silky.
  • Combination with Pasta:
Cook the ditalini noodles into the dish. Combine everything, making sure the pasta is coated with the rich sauce. If your sauce becomes too dense, add more chicken broth until you reach the desired Consistency.
  • Serve and Garnish:
Sprinkle with a few red pepper flakes to give the slightest hint of spice, and remove it if you prefer a less spicy taste. Serve the Creamy Marry Me Ditalini Sausage Pasta with garlic bread or a crisp green salad for a full dish.

Notes

Leftover Storage:
Keep the leftovers of Creamy Marry Me Ditalini Sausage Pasta in an airtight container in the refrigerator for up to 3-4 days. If you are reheating the dish, add a splash of chicken broth into the bowl or pan to bring back the smooth Consistency of the sauce. You can also heat it in the microwave; adding the broth can help preserve Consistency.
Broth and Cream:
If the sauce becomes thick excessively, you can add broth from chicken or additional cream to let it loosen up to the Consistency you prefer.
